4 chicken fillets
1 cup mixed veg
1 small onion
Half a cup frozen corn
2 packets Knorr soups( mushroom & curry vegetable)
3 sprigs of Fresh thyme
1 cup of cheese
Dice onion and fry in a little oil, once browned, add chopped chicken fillets, garlic and thyme. Once chicken is browning, add peppers, salt and paprika.Dice potatoes and par cook in microwave for 5 minutes with frozen veg, remove and add to chicken. Retain boiled water that potato and veg was microwaved in and add 2 teaspoons of mushroom soup packet and 2 teaspoons of curry vegetable soup packet, mix till all lumps disappear. Add to chicken and veg and allow to cook on medium heat for 15 minutes. Once slightly thickened and potatoes are soft but firm, add in 250ml fresh cream and a cup of cheese.. stir and turn off heat and allow to cool slightly.
Brush the edges of a deep tray with an eggwash or cooking spray to prevent pastry from sticking too much. Pour chicken mixture into tray and cover with pastry, brush with egg and bake until pastry is done.
INFO & TIPS
It is a filling meal on it's own, but you may serve with mash and steamed brocolli.
