Ingredients:2 Woolworths (SANHA) flatbreaddhania (coriander) chutney2 large tomatoes (thinly sliced)2 large brinjalsOlive oilRobertson's veggie spiceGrated cheese1 large tomato (diced)Coriander
Mince-1 large onion (sliced)2 tablespoon oil1 taj (cinnamon stick)250g beef mince1 teaspoon red ginger garlic masala½ teaspoon chilli powder½ teaspoon salt½ teaspoon dhana jeeroo powderPinch turmeric powder2 tomatoes (liquidized)
Method:1. In a pot, braise onion with oil and taj till golden.2. Add chillies abd spices, braise till fragrant.3. Add washed mince and braise till no liquid remains.4. Add ½ cup water and tomatoes and cook till reduced.5. Take flatbread, spread coriander chutney on it.6. Then spread on cooked beef mince.7. Sprinkle some cheese.8. Spread diced tomato around edge of flatbreads.9. Leave aside.10. Hassleback brinjals and place tomato slices inbetween.11. Drizzle on olive oil and Robertson's veggie spice.12. Bake in moderate oven till brinjal is tender.13. Place 1 each in center of flatbread.14. Sprinkle more cheese onto flatbread and garnish with fresh coriander.15. Bake till cheese is melted.
