Strawberry & Kiwi Pyramid Cheesecake

Ingredients:125g butter (room temp.)⅓ cup ordinary sugar1 extra large egg2 teaspoon vanilla essence250g plain cream cheese18 tennis biscuits 6-8 large strawberries2 kiwis250ml fresh cream2 tablespoon icing sugar1 cadbury flake
Method:1. Lay plastic wrap down on surface. Place on it 3 rows of 6 biscuits each.2. Beat butter and sugar till smooth. Add egg and vanilla and beat in. Beat in cream cheese till smooth. 3. Spoon 2/3 onto biscuits.4. Slice even slices of strawberries needed to place down in middle row. 5. Then slice even slices of kiwi and place over strawberries in middle row.6. Spoon over remainder cream cheese mixture onto the fruit.7. Bring up the side rows with plastic wrap and form a triangle "pyramid".8. Wrap and leave in fridge for 3 hrs.9. Whip cream with icing sugar till stiff. 10. Remove plastic wrap from cheesecake.11. Smoothen whipped cream onto cheesecake and crush flake all over. Garnish with strawberries & kiwis.12. Place back into fridge for few hours and serve directly from fridge.
Note: You may add cottage cheese to the filling if you are looking for a tangy cheesecake.
