Fruit Cake

RECIPE

My style (Boil the Fruit mix)
500 g Fruit cake mix1 cup brown sugar (I used white and I added little extra sugar ¼ cup)2 cups Water¼ cup orange juice(Can add a bit of orange zest optional)250 g Butter3 tablespoon oil2 teaspoon mixed Robertson's spice ,(for baking)1 teaspoon cinnamon powder1 full teaspoon baking powder1 teaspoon cream of tartar4 eggs beaten (I beat yolks separately and whites seperately2 teaspoon full vanilla essencePineapple essence few dropsOrange essence few drops3 cups self raising flour(Or you mix normal 3 cups cake flour with ¾ teaspoon salt 4&½ teaspoon bicarbonate of soda)In a large pot over medium heat addFruit mix, brown sugar or white sugar ,water, orange juice, butter, mixed spice, cinnamon, baking soda, cream of tartarBring to a gentle boil, simmer for 10 minutesRemove from stove pour in another dish to cool and allow to cool for +- 15 minutes
Beat eggs and add all the essences
When ready to mix add the flour gradually to the fruit mixture adding the eggs as you mix with a wooden spoonWell
OptionalAdd chopped pecans and red and green chopped glazed cherries (I used both and I also sprinkled on top of cake before pouring it in the greased foiled line Large Oven Tray)
Bake for 40 minutes +- 1 hour at 180* Or till you do a test with skewer in the centre if it comes out clean Bake till nice brown colour is achievedRemove from ovenI did a glaze topping with 1 tablespoon jam mixed with 2Tblsp water cooked on stove and smeared over the hot cake)Cool in the oven tray (Do Not remove whilst hot)Keep covered and wrapped in a foil and in a sealed containerEnjoy with custard or cream
