INGREDIENTS
Chicken-2 large chicken fillets (sliced into strips)1 teaspoon garlic powder1 teaspoon onion powder½ teaspoon peri-peri powder½ teaspoon paprika powder½ teaspoon dried mixed herbs½ teaspoon ground cumin½ teaspoon salt ½ teaspoon freshly ground black pepper½ lime (juiced)2 tablespoon oil
Veg-1 red bell pepper (julienned)½ green bell pepper (julienned)½ yellow bell pepper (julienned)1 small onion (sliced)2 tablespoon oilPinch salt
Also needed-6 tortillas½ head lettuce (optional)125 ml sour creamFeta cheese (optional)GuacamoleChopped coriander/ spring onions
METHOD
1. Heat oil in a frying pan over high heat.2. Marinate chicken with the rest of ingredients.3. Cook the chicken, turning often, until done.4. Remove chicken from pan.5. Add in oil for veg, heat and add in onion and peppers and stir fry till just tender.6. Lightly toast the tortillas, one at a time, on each side.7. Wrap the chicken, peppers, spring onions, sour cream, guacamole, feta etc in the tortillas.8. Serve immediately.
