¼ cup olive oil2 cups almonds sliced2 tablespoon sesame seeds2 teaspoon crushed red chillies1 teaspoon salt2 cups cucumber- sliced2 cups pineapple-chopped¼ cup red peppers-julienne¼ cup green peppers- julienne½ cup dates, chopped¼ cup feta cheese, cubed 1 packet washed mixed lettuce
Dressing:½ cup mayo¼ cup mustard sauce1 tablespoon brown sugar2 tablespoon lemon juice1 tablespoon soya sauce (optional)½ teaspoon saltFreshly ground pepper
Heat oil, fry almonds & sesame seeds until light pink.Strain almonds & sesame seed mixture, leave oil to cool.Place almond mixture on a tray & sprinkle crushed chilles & salt over.Combine cucumber, pineapple, peppers, dates & feta cheese. And add leftover olive oil from frying the nuts.Tear lettuce into pieces & mix with other ingredients.Pour dressing over the vegetables & mix well. Pile the salad on a platter, cover with almond mixture just before serving.
