1 tin creamstyle sweetcorn½ cup frozen corn 2 beaten eggs1 teaspoon salt½ teaspoon white pepper1 teaspoon dhana jeeroo powder1 teaspoon baking powder1 cup cake flourChopped dhania (coriander) (coriander)2-4 fresh jalapenos (deseeded, chopped fine)¼ cup grated cheddar cheese¼ cup small mozzarella cheese cubesOil for fryingLime wedges to serve
1. Cook frozen corn in microwave for two minutes.2. Mix all ingredients together to make batter.3. Drop tablespoonfuls into hot shallow oil. 4. Cook on one side till bubbles form & side frying is golden.5. Turn over & fry till golden.6. Place on kitchen paper to drain excess oil.7. Serve with limes & a dip of choice.8. Serve hot whilst cheese is melted.
