INGREDIENTS
Inspired by The Address restaurant Durban
The dough :
1 teaspoon yeast
3⁄4 cup warm water
2 cups snowflake flour
1 teaspoon salt
1 teaspoon sugar
2 tablespoon oil
2 1⁄2 teaspoon plain yogurt
mix the yeast and warm water together .
In the meantime add the the ingredients and using your fingers form breadcrumb like texture . add the yeast water and form a soft dough . add more water if necessary .
cover and allow dough to rest for atleast 1 hour .
Potato about 3 big or 4 small :
boil and mash potato
in a pot add some oil
on low heat add
½ teaspoon whole jeera seeds
add ½ teaspoon ginger garlic
½ teaspoon ground green chili
add the mashed potato
add pinch haldi
salt
½ teaspoon dhana powder
¼ teaspoon jeera powder
some chili owder
¼ teaspoon garam masala ( optional )
allow this all to cook .
remove from pot and set aside to cool completely .
once cooled add the cheese and mix until combined .
make 2 alloo balls
1 cup grated Gouda cheese frozen or cold from fridge ( I used frozen )
METHOD
Prepare :
divide dough into 4 equal rounds .
Roll out the 4 dough rounds into your hand size rounds
take the 1 alloo cheese ball and flatten on the rolled out round and flatten add the other rolled out round to cover the flatten alloo ( make sure nothing is open )
on a floured surface start rolling this out about roti size or bigger .
heat up a tawa sprinkle some water on tawa add the rolled out paratha allow to cook until nice and brown , cook the other side and brush some butter and fry .
sprinkle some chili Aromat (a South African Spice) onto cut and serve with green chutney or runny red sauce anything you desire .

chili powder
salt
tomato sauce
