4 eggs1 cup ordinary sugar½ cup sunflower oil2 teaspoon vanilla essence1 ½ cups flourPinch salt2 ¼ teaspoon baking powder½ cup boiling water
1. Preheat oven to 180degC. Line cupcake pans with paper cups.2. Beat eggs and sugar till light and fluffy.3. Add oil and vanilla and beat in.4. Sift dry ingredients and then add to batter alternatively with water.5. Mix till smooth.6. Spoon batter into cups till ¾ full.7. Bake for 15-20min or until skewered and skewer comes away clean.8. Allow to cool before decorating.

Note: to make into chocolate cupcakes, remove 2 Tbsp flour and replace with 2 Tbsp cocoa powder
