INGREDIENTS
Black Bottom Oreo Cupcakes

Ingredients:1 cup ordinary sugar½ cup oil1 cup warm water1 teaspoon vanilla essence1 tablespoon white vinegar½ teaspoon salt1 ½ cups flour¼ cup cocoa powder½ teaspoon bicarbonate of soda½ teaspoon baking powder2x 176b box of Oreos
Topping (TO BAKE with):2 tubs Lancewood plain cream cheese (softened to room temp.)2 eggs80ml ordinary sugar
Frosting-125g butter (room temp.)3-4 cups icing sugar2 teaspoon vanilla essence2 tablespoon milkFew crushed oreos
METHOD
1. Preheat oven to 180degC. Line cupcake pans with paper cases.2. Sift dry ingredients except cocoa powder, and mix with sugar in a large dish.3. Mix warm water with cocoa until smooth.4. Make a well in the center of dry ingredients, and pour in cocoa water, oil, vinegar and vanilla.5. Beat together until just blended.6. In a separate dish, beat cream cheese till smooth. 7. Add in eggs and sugar and beat till smooth, but do not overmix.8. Place an oreo at the bottom of each cupcake case.9. Spoon chocolate batter over oreo till cupcake cup is ½ full. Then spoon over cream cheese mixture till topping fills cup ¾ full.10. Bake for 20min and when done allow to cool.11. Beat frosting ingredients together and pipe onto cupcakes 12. Decorate with mini oreos or half a normal oreo.
INFO & TIPS
#Variation: If you do not wish to make frosting, then sprinkle 1 cup dark choc-chips over cream cheese topping before baking. When cupcakes come out of oven, place the oreo in while the topping is soft, and the oreo will set with it as it cools.
