RECIPE
To make your rainbow here's some suggestions:1. Red onion/ purple cabbage/ beetroot2. Baby spinach / broccolini/ green pepper3. Cucumber/ baby marrows/ celery/ asparagus4. Sweetcorn/ yellow pepper5. Carrots/ sweet potato/ butternut6. Baby tomatoes/ red pepper
You may serve the veg fresh like a salad or roasted. To make the sauce, I add salt, garlic, ground green chillies, ground black pepper and dash mixed herbs to taste to the plain yoghurt. I like to use it chilled.
INFO & TIPS
Note: If you'd like to add some protein, some suggestions: chicken strips or chicken pops, chicken/mutton/beef meatballs or even beef strips will work. Falafel too!
