INGREDIENTS
½ cup buttermilk or maas 1 cup white sugar 3 large eggs 1 ½ cups flour 2 teaspoon baking power ½ teaspoon salt Grated lemon zest from 1 medium sized lemon ½ cup oil
METHOD
Mix together buttermilk, sugar and eggs. Add flour, baking powder , salt and lemon zest and mix till just combined.Add oil and stir in till completely mixed. Pour into a greased pan and bake at 160° until done
Allow to cool slightly and pour over glaze made with ¼ cup fresh lemon juice ¾ cup icing sugar Allow to cool completely and dust with icing sugar
