1 ½ cups fresh white mielies (reserve the ½ cup)2 eggs2 tablespoon melted butter½ cup milk1 cup flour2 ½ teaspoon baking powder1 teaspoon salt1 teaspoon white pepper½ teaspoon paprika½ cup diced sweet peppers (optional)
1. Preheat the oven to 180degC and grease a mini muffin pan.2. In a blender, mix the 1 cup of corn, milk, eggs and melted butter together until a coarse mixture forms. 3. Whisk together the flour, baking powder and spices. 4. Using a silicone spatula, fold the dry ingredients into wet mixture, then fold in remaining ½ cup corn and diced peppers with corn mixture until a thick mixture forms.5. Spoon into mini muffin holes till ¾ full and bake till golden and risen. 6. Test with skewer if cooked through.
INFO & TIPS
a) May leave sweet peppers out for more traditional taste.
b) May also bake in a medium sized loaf pan, cut in slices and serve with butter or sour cream and cheese.
