INGREDIENTS
2 cans black beans (drained & rinsed, ⅓ tin reserved)1 green bell pepper (finely diced)1 red pepper (finely diced)1 onion (finely diced)1 carrot (peeled, finely diced)½ cup instant oats¾ teaspoon salt¼ teaspoon freshly ground black pepper1 teaspoon chilli powder1 teaspoon Roberson's Italian Seasoning1 teaspoon jeeroo (cumin) powder1 teaspoon dhana (coriander) powderPinch turmeric powder1 teaspoon garlic powderchana (chickpea) flour (if needed)Extra virgin olive oil
Also needed-Burger bunsCucumberTomatoFrilly lettuceRed onionDijon mustardMayonnaise
METHOD
1. Add peppers, carrot and onion with olive oil to a non-stick skillet and sauté until soft.2. Set aside to cool.3. Mash the beans until smooth, not the reserved beans.4. Add oats and spices and mix all together.5. Add cooled veggies and reserved beans and mix in.6. Taste and adjust seasonings if needed.7. Grease a large baking sheet.8. Form into patties and place on baking sheet. 9. Freeze for 30min.10. Drizzle very lightly, olive oil in pan on medium heat, and fry till golden, then gently flip over and fry on the other side. 11. Slice burgers buns in half. Spread on bottom half some Dijon mustard, then layer on frilly lettuce, a patty, tomato slices, onion slices, another patty, more Dijon mustard, cucumber ribbons.12. On top bun half, smear on some mayonnaise and close bun, keeping in place with a skewer. Serve.
INFO & TIPS
If the mixture of patties are too wet and not forming well, then add 1-2 Tbsp at a time of chana (chickpea) flour till it's binded well.
