INGREDIENTS
1 chicken whole2 tablespoons of oil1 onion sliced finely 4 cloves 4 whole black pepper corns4 cardamom pods1 tablespoon whole cumin seeds1 piece of cinnamon stick 1 tablespoon ginger and garlic paste1 tablespoon red masala 2 tomatoes liquidized or grated1 tablespoon of tomato paste 1 teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon fine red chilli powder 1 teaspoon turmeric Salt to taste 2 medium potatoes washed and cut in to quarters Coriander leaves for garnishing
METHOD
In a pot add oil and the whole spices ie.Pepper corns cinnamon stick cumin seeds cardamom pods and black pepper cornsLet that sizzle abit Add your onions and allow to fry until golden brown Once gold add your chicken and allow to braise Once chicken is white and starting to cook add wet spices such as ginger garlic paste and red masala. Stir in the chicken and leave for another few minutes until ginger paste is cooked insideAfter this is done add aromatic spices I.e turmeric coriander powder and red chilly powder Let the spices cook in nicely Then add your potatoes to the pot and stir Add your tomatoes and tomato paste Let it cook with the spices Once the gravy starts getting thick add your salt and water and leave to simmer until potatoes are softGarnish with coriander leaves
