INGREDIENTS
2 heads lettuce, washed and broken up
4 tomatoes, cut into quarters
2 tins tuna, drained and flaked
200g fine green beans, blanched
3 eggs, boiled and sliced
100g black olives
For the dressing
¾ cup (180ml) olive or avocado oil
¼ cup (60ml) lemon juice
1 teaspoon (5ml) Dijon mustard
salt and ground black pepper, to taste
METHOD
1 Place the lettuce on a serving platter,and
scatter the tomatoes, tuna and beans over the
leaves. Garnish with the eggs and olives.
2 For the dressing, combine the oil, lemon juice
and mustard. Season with salt and pepper, drizzle
over the salad and serve.
INFO & TIPS
You can add some croutons as well. Very yum!
