INGREDIENTS
2 egg yolks1 teaspoon vanilla essence1 tablespoon milk33g flour½ teaspoon baking powder2 egg whites23g castor sugar
METHOD
Whisk together the egg, vanilla essence and milk. Sift and whisk in the flour and baking powder.
In a separate bowl beat egg whites gradually adding in sugar till you have stiff peaks.
Add a small amount of meringue mixture into the batter and fold until smooth.
Then add in the remaining mixture and fold in till smooth.
Spoon the mixture into an oiled nonstick pan, create two layers by creating a base and then another dollop on top. Cover pan and leave on low for 3 minutes. Add third dollop and cover for another minute.
Add a slight bit of water and cover, this enables the pancakes to steam. Takes about 2 - 3 minutes.
Once the sides of the pancakes are cooked flip them over, add a bit of water and steam until done.
Top with icing sugar, ice cream, syrup etc
