INGREDIENTS
4eggs1 ½ cup granulated sugar ¾ mug oil2-3tsps coffee mixed into 1 cup hot water and left to cool (depending on how Strong you want the coffee taste to be)approx 2 - 2 ½ cups flour2 ½ teaspoon baking powderElachi (cardomom) powder
For the topping:3 small bars of caramac chocolate (or any caramel chocolate including melting chocolate)1 teaspoon vanilla essence3 level tblspns Elmea or woolworths double thick cream coarsley crushed walnuts
METHOD
1) beat eggs and sugar till fluffy.2)add oil and beat again till fluffy.3)add the 1cup of coffee mixture and the Elachi (cardomom) powder and mix.4)Fold in the flour and the baking powder to form a cake batter.5)seperate batter into 2 loaf trays or one big tray if you prefer.-bake at 180degrees for 30-40mins till cooked through and golden brown.6)leave to cool then decorate with topping and walnuts
Topping method:1)break caramac into pieces and melt in a glass bowl over a pan of boiling water.2)when chocolate is melted add the vanilla essence and double thick cream and mix well3)pour this over the cake and decorate with walnuts and Elachi (cardomom) seeds.
