500g hake fillets1 cup flour ¼ teaspoon bicarb1 teaspoon salt½ teaspoon red chillie flakes ½ teaspoon pepper ½ teaspoon mixed herbs 1 teaspoon vinegar ginger beerA packet of Panko crumbs
METHOD
BatterCombine the flour, bicarb, salt, chillies, pepper, mixed herbs and vinegar.Add ginger beer to form a runny batter.
Pat hake fillets dry using a paper towel. Dip in batter, then dip in panko crumbs.Fry in deep oil on medium heat until golden brown.Serve with a squeeze of lemon, tartar sauce and fries
