1. Squeeze water out of grated onion.2. Keep the onion juice and discard pulp. 3. In a dish, mix onion juice, lemon juice, oil, garlic, yoghurt, tomato paste, and spices.4. Add chicken cubes to marinade and leave in fridge covered for 2hrs.5. Thread a cube of chicken, then a piece of red pepper, and repeat until all are on skewers.6. Grill on an electric griller/ or over hot coals/ or in preheated oven for approximately 10min (or more depending on how it's cooked) until charred all over (but not overcooked).7. Whilst grilling, baste with marinade left behind. 8. When almost done, sprinkle all over dried oregano and sumac.
