INGREDIENTS
4 eggwhites 2 cups of Castor sugar (250grams)1 teaspoon vanilla essence¼ teaspoon White grape vinegar (optional)
METHOD
Beat eggwhites until theyre stiffAdd in sugar slowly 1 teaspoon at a time until all the sugar is incorporated and the mixture is Glossy and StiffAdd in the Vanilla E and vinegar and FOLD in with a metal spoon.
Once thats done, spoon the mixture onto parchment paper on a tray, shape as desired. I usually blob 2 tablespoons of the mixture onto the baking paper and then shape them into little volcanos with a slight dip in the centre. You could pipe the mixture as well if you want to.
Bake at 150°c for 1 hour then reduce temperature to 100°c and leave for another 15-20 minutes. (Bare in mind all ovens are different, you will have to adjust accordingly)
Once thats done switch off the oven and DONT open the door. Leave for 2 to 3 hours to cool off or overnight.
Top with Fresh cream and strawberries and drizzle with chocolate.
