INGREDIENTS
-Boudoir biscuits/ Lady fingers- instant coffee-1 part whipping cream-1 part mascarpone cheese-cocoa powder- castor sugar-1 teaspoon vanilla essence
METHOD
- Dissolve instant coffee in boiling water and leave to reach a warm temperature.- Beat cream until it thickens but is still spreadable. Slowly fold this into the mascarpone cheese. Don't add all at once as this creates lumps. Once combined, add castor sugar ( I use ½ cup for 250ml cream and 250g mascarpone cheese but you can sweeten as desired) and vanilla essence and mix until smooth. It shouldn't be too stiff.- Lightly dip the lady fingers in the coffee and layer them in a greased dish. Don't wet them too much as they will get soggy as the dessert sets. Spread the cream mix over and dust with cocoa powder.- Multiple layers hold well.-Chill for at least 3 hours
