INGREDIENTS
4 extra large eggs1 cup ordinary sugar 2 teaspoon vanilla essence ½ cup oil1 ¼ cups cake flour (sifted)¼ cup cocoa powder2 teaspoon baking powder¾ cup freshly squeezed orange juiceRind of 2 oranges (optional)
METHOD
1. Beat eggs and sugar together till light and fluffy.2. Add in vanilla, mix in.3. Add in oil, beat in.4. Then sift in flour, cocoa and baking powder.5. Pour in juice and rind, mix in. 6. Pour batter into a greased and lined cake pan.7. Bake in a preheated oven at 180°C for +- 30min.8. Skewer the cake in the center to test if cooked through.9. Remove from oven and cool.10. Garnish with orange slices and dusting of icing sugar.
INFO & TIPS
Note: I spread on a thin layer of buttercream frosting and a thin layer of orange marmalade. Then place on orange slices and a sprinkling of chocolate vermicelli.
