INGREDIENTS
250ml Cake Flour
185ml Cocoa Powder
250ml Castor Sugar
15ml Baking Powder
pinch of salt
125ml Oil
125ml Strong Brewed Coffee
5ml Vanilla Essence
4 Extra Large Eggs, seperated
100g Dark Chocolate
Chocolate Ganache:
150g Chocolate
100ml Fresh Cream
METHOD
Sift cake flour, baking powder, cocoa powder,pinch of salt in a bowl. Add castor sugar to the dry ingredients. Beat egg whites until white and fluffy. Grate dark chocolate and add to the egg whites. Make a well in the dry ingredients and add the egg yolks, oil, vanilla essence and the strong brewed coffee. Beat the mixture and then fold in egg whites. Bake at 180 degrees for 30-45min in a 24 cm round pan.
For the ganache boil the cream add the chocolate and let it cool. Decorate as desired.
