INGREDIENTS
1 bottle Mrs P's Tikka Masala4 chicken quartersSalt Freshly cracked black pepper4 tablespoon lemon juice4 tablespoon butter
METHOD
1. Rinse quarters, pat dry. Score the chicken pieces on one side.2. Sprinkle on salt and pepper and massage it onto chicken.3. Rub ½ the bottle of Tikka masala onto chicken.4. Drizzle over a little oil.5. Place into a preheated 200°C oven on the center rack and cook.6. In a saucepan on the stove, melt the butter with remainder tikka masala and lemon juice.7. Braise till fragrant.8. Brush onto chicken as it cooks, turning over now and then, so that it cooks evenly. 9. When almost done, baste with whatever masala is left and leave to redden, without overcooking.10. When done, garnish with chopped coriander and serve with potato wedges, roti and lemon wedges.
INFO & TIPS
Note: May use with pieces skin on if you'd like. Also a lovely marinade to braai pieces, fillets and sosaties with.
If you would like it saucy, add 2-3 Tbsp of Nando's Bushveld braai sauce and some fresh cream.
