INGREDIENTS
500g chicken fillet (cut into fat strips)Cold water to rinse
Coating:½ cup self raising flour¼ teaspoon turmeric powder¼ teaspoon white pepper powder¾ teaspoon salt1 teaspoon chilli powder
Marinade:3 tablespoon oil4 tablespoon Robertson's Cajun spice1 tablespoon lemon juice
METHOD
1. Mix coating ingredients .2. After you have cut chicken strips, leave aside.3. In a frying pan, pour in shallow oil, heat on medium heat.4. Once the oil is ready, rinse the chicken strips out.5. Dip in seasoned flour and fry until lightly golden on either side.6. Place on an oven tray.7. Braise cajun spice, oil and lemon juice on stove till fragrant.8. Drizzle over fried strips, and gently toss with hands, to coat.9. Place in oven under grill to crisp and redden.10. Serve with chips and whip, or place in wraps with salad.#whenruhanacooks
INFO & TIPS
Note: Do NOT over fry the chicken. It will become stiff and even more dry when grilling in oven. Do NOT cut the strips too thin. It will overcook easily.
