INGREDIENTS
½ red cabbage, finely shredded2 carrots, finely shredded1 orange, peeled and segmented2 tablespoon finely chopped mint leaves2 tablespoon finely chopped coriander2 tablespoon plain yoghurt1 tablespoon mayonnaise1 teaspoon cumin seeds, toasted2 limes, juice only1 teaspoon honey1 teaspoon mustard (Dijon or wholegrain)1 red chili, finely chopped (optional)Pecan nuts
METHOD
1. Put the cabbage, carrot, orange, mint and coriander in a large bowl.2. Mix together the yoghurt, mayonnaise, mustard, cumin, lime juice, chilli and honey in a separate bowl and season with salt to taste. 3. Pour this mixture over the salad and mix well.4. Add chopped pecan nuts and mix through.
