INGREDIENTS
Quinoa
Boneless chicken (cut into chunky
strips)
Turkey Rashers
Ciabatta
Pak choi
Romaine Lettuce
Cherry tomatoes
Anchovies
Cucumber
Parmesan Cheese
Dill
Basil
Garlic
Balsamic Vinegar
METHOD
Boil half cup quinoa according to instructions on packet..and let it rest for 5 minutes..put chicken in a bowl and add salt, pepper, cayenne pepper and Cajun spice and the boiled quinoa..then fry in a bit of olive oil in a frying pan..cut off leafy ends of pack choi and chop up the turkey rashers add a splash of balsamic vinegar and fry both together. Toast the ciabatta and cut it into crouton...on a wooden chopping layer the romaine lettuce which is chopped into chunks and halve the cherry tomatoes. Cut the cucumber into 4s and slice..scatter onto lettuce..layer the pak choi and Turkey rashers..then the crouton and the chicken/quinoa mix.
Salad Dressing:
In a blender blend half a bunch of dill..a handful of basil leaves, a few cloves of garlic, 3 tablespoon of yoghurt, juice of one lemon, 2-3 anchovies, a splash of Worcestershire sauce,1 tablespoon vinegar,1 tablespoon English mustard, 50g Parmesan cheese..
Pour the dressing over the salad
