INGREDIENTS
1 cup urad dhall (lentils) (white lentils)¼ cup pink Masoor (Back lentils) dhall (lentils) (red lentils)¼ cup magni dhall (lentils) (yellow lentils)¼ cup toovar dhall (lentils) (Oil dhall (lentils))¼ cup split moong dhall (lentils)Or whole (green lentils)3 level teaspoon salt 1 teaspoon chilli powder 1 ¼ teaspoon arad (Turmeric)2 teaspoon dhana jeeru (cumin) powder1 1/1 medium onions (chopped)1 teaspoon whole jeeru (cumin)1 ½ cups liquidised tomato (tinned tomato or passata)1 teaspoon ginger paste 1 ½ teaspoon garlic paste3 tblspns oil ¼ cup chopped fresh coriander Boiling water
For the vagaar:3 teaspoon ghee (Clarified butter)7 small cloves of garlic or 5 big (peel and cut into thin slices)Khuri limbre (curry leaves)1 teaspoon whole jeeru (cumin)
For Garnishing:Green chilli slices (optional)Chopped coriander
METHOD
1.) Mix, Wash and boil dhall (lentils) in boiling water with a pinch of salt, arad (Turmeric) and oil - keep topping up with boiling water until dhall (lentils)’s are all fully cooked.2.) Heat oil in a separate pot, add the chopped onions and whole jeeru (cumin) and cook till golden brown.3.) Add the tomato, ginger garlic paste and all of the spices, cook on medium heat until the oil comes to the top (approx 15-20mins), add in the chopped coriander and mix well.4.) Add the boiled dhall (lentils) with the water that’s left in it - mix well, and boil on medium heat for 15mins for all of the flavours to blend together.5.) Make the vagaar in a separate pot by heating the ghee (Clarified butter), then add the whole jeeru (cumin) and curry leaves - when this starts to pop, add the fresh garlic slices - fry until they are golden brown then add the vagaar over the dhall (lentils) and place the lid of the pot over the dhall (lentils) for a few minutes for all the flavours to mix.6.) Dish the dhall (lentils) out into serving bowls and garnish with coriander and green chilli slices (optional).7.) Serve with naan, bread, roti or jeera rice ... Enjoy❣️
