125g butter½ cup castor sugar1 egg yolk½ teaspoon vanilla essence1 teaspoon baking powder1 - 2 cups flour 1 egg white1 cup coconut Strawberry or apricot jam
Cream butter and sugar, then add the egg yolk and vanilla. Mix well, then add the baking powder and enough flour to make a dough. Roll small balls and make an indent in the center using your thumb or small round object. Dip each one into the egg white and roll into the coconut. Lay them on a baking tray and bake in a preheated oven on 180 degrees until golden brown. While still hot, press the indent down and fill with jam.
