Recipe: My Mum
INGREDIENTS
500g mutton cubed or more depending on your preference1 onion chopped 1 tomato,gratedFew elachie pods,cinnamon stick and cloves Ginger and Garlic paste jeeru (cumin)Chilli powder,tumeric,dhania (coriander)-jeeru (cumin) powder.Green masalaSalt to tastePinch sugar or to tasteFew Saffron threads dissolved in hot water (1cup)Gharum Masala
Cabbage shreddedGreen beans cut in halfPotato cut in cubesCarrot cut in cubes.dhania (coriander) for garnish.
METHOD
1. Heat oil and a tablespoon of butter.2. Add chopped onion and jeeru (cumin). Cook till lightly brown. Add meat,ginger garlic paste,elachie,cloves and cinnamon stick,and green masala.Chilli powder,tumeric and dhania (coriander) jeeru (cumin) (about a teaspoon each) Add water and cook till meat is almost soft. Before meat cooks through entirely add the safron water,and cook until some water remains. It must not be completely dry.
To your washed and cubed veggies,including the cabbage,add 1 teaspoon chillie powder,tumeric,dhania (coriander) jeeru (cumin) powder. Add this over the meat,along with just enough water to steam the veggies. Do not add too much water,as you want the meat and veggies to cook in their own juices.
When veggies are almost tender,add the grated tomato,salt and sugar to taste,and gharum masala. Stir well.
Garnish with dhania (coriander).
Serve hot with roti,salad and atchar.
I served mine with lemon atchar.
INFO & TIPS
You can use any combination of vegetables.
Beetroot also works well.
