INGREDIENTS
Β½ cup orange π juice 1 cup grated carrots1 Β½ tablespoon mixed spicesOrange zest 2 eggs 1 cup sugar1 tablespoon vanilla essence ΒΌ cup cooking oil250 gram butter π§ Β½ cup butter milk (can use normal milk)1 teaspoon baking powder 1 teaspoon baking soda1 teaspoon salt 1 Β½ cup flour ( you may add more if needed)
METHOD
Beat sugar and butter π§ together until fluffy..
Separate the egg yolks and the whites.
Add the yolks to the butter mixture and beat together until combined..
Add the oil and vanilla essence and beat.
Add butter milk, carrots, spices and orange juice and also orange zest and mix together...
Mix the dry ingredients together with the wet to form a smooth batter.....
Beat the egg whites until stiff pick and add them to the cake batter and fold slowly.....
Pour the cake batter to the baking tin and bake for 40 minutes at 280 degrees..
Once tasted will never be wasted π
