500g chicken minceSeasonings salt and white pepper1 teaspoon fresh red and green crushed chillie relishes 1 teaspoon ginger and garlic paste ½ teaspoon kashmiri red chillie powder¼ teaspoon tumeric powder¼ teaspoon dhania (coriander) /jeeru (cumin) powder300g sweet corn kernels or whole kernels steamed and slightly blended 3 Tablespoon butter ghee (Clarified butter)200g Cheese cheddar 100g Mozzarella 4 Tablespoon Cream cheese 1 large red onion grated remove excess moistureFresh chopped dhania (coriander) for garnish Freshly chopped spring onions
In a bowl prepare the chicken mince, wash drain in colender, add seasoning, ginger garlic chilli relishes, add all spices, lightly toss, cling wrap place in refrigerator.
In a saucepan, add water bring to steam the whole Corn kernal drain, slightly blend in liquidizer, add 1 teaspoon green masala and set aside,add white pepper. If using sweet corn in can, pour into a bowl set aside. Add 2 Tablespoon cake flour, Green chillies chopped give it a quick mix. Fresh chopped spring onions for garnish
Braise the red onions in butter ghee (Clarified butter), add the chicken mince mixture and let it fry until all moisture evaporated. Add the chicken mixture to the braise onions and cook on low to medium heat.
Remove the cooked mixture, add sweet corn mixture. Grate the cheese keep aside sprinkle black pepper. Add the grated cheese and blend in cream cheese. Garnish with fresh chopped dhania (coriander). Check for seasoning. Lightly toss and cling wrap this filling is now ready.
Samosa PurSeparate the layers, cover with a damp kitchen tea cloth, make your flour paste not too thick nor too runny... Fill samosas, pack either in zip lock bags tray, according to family size, clearly label on the packages. Freeze at this stage for later use. Or fry in pre heated oil to a evenly beautiful golden brown. Serve with dhania (coriander) dips or sauce of your own preference. Share as received... Duahs... Bon appetite ❤️Shu-Hani❤️
