2½ cups all-purpose flour1 teaspoon bicarbonate of soda1 teaspoon fine salt1 cup (230g) butter, soft 1¼ cups normal white sugar¼ cup brown sugar1½ tspns vanilla essence1 egg2 cups chocolate chips
Preheat oven to 180ºCup. Prepare a parchment paper lined cookie tray. Cream together the butter with the white and brown sugar until light and fluffy. Add in the egg and vanilla essence, mixing thoroughly. Beat in the flour, bicarb and salt. Fold in the chocolate chips. Roll a tablespoon of cookie dough into a ball. Take a glass and using the bottom, flatten out each cookie onto the tray. Bake at 180ºCup for 9-11 minutes, until golden brown. Cool and enjoy these crispy chocolate chip cookies.
