INGREDIENTS
Chocolate mousse

2 tablespoon cocoa powder
5 tablespoon hot water
180g milk / dark chocolate chopped (can also use chocolate chips)
1 cup fresh cream chilled
1 tablespoon sugar
Pinch of salt
Chocolate biscuits crushed
METHOD
Combine cocoa powder and hot water, set aside.
Melt chocolate in a heatproof bowl over simmering water, stirring occasionally until smooth.
Remove from heat and cool slightly, ± 5 minutes.
In the meantime beat together the cream, sugar and salt on medium speed until it begins to thicken. Increase speed to high and beat to form soft peaks. Whisk cocoa powder mixture into melted chocolate until smooth.
Fold whipped cream into chocolate mixture until no white streaks remain.
Spoon some of the the crushed biscuits at the bottom of individual bowls, pipe some mousse over the biscuit then add more crushed biscuits and mousse
