INGREDIENTS
1 cup all-purpose flour2 tablespoon sugar1 pinch salt2 eggs1 ½ cups milk½ Teaspoon vanilla extract / essence 1 tablespoon unsalted butter, meltedSpray and cook
METHOD
In a bowl, combine the flour, sugar and salt. Whisk in the eggs, ½ cup of milk and the vanilla until smooth. Gradually add the remaining milk, stirring constantly and then whisk in the melted butter.Heat a non stick pan or tawa.When the pan is hot, spray the base with spray and cook.For each crepe, pour about 3 tablespoons of batter in the centre of the pan / tawa. Tilt the pan / tawa to spread the batter evenly until it covers the base of the pan. When the edge peels off easily and begins to brown, it's time to flip the crepe with a spatula. Continue cooking for 10 seconds, until cooked through, and remove from the pan / tawaPlace the cooked crepes on a plate as you go. Cover with aluminum foil to keep them from drying out and to keep them warm. Serve with fresh fruit and cream, or fill with caramel and banana, drizzle over nutella or warm Lindt sauce and a blob of ice cream. Enjoy as something sweet or savory
INFO & TIPS
Add some warmed orange juice with sugar and drizzle over for a crepe suzette.
