My Own Style
Inspired and Adapted from Various village styles on the internet
MARINATE 1 Kg Cut up Mutton1 tablespoon ginger garlic Saffron¾ Cup beaten up Maas1 tablespoon Biryani mix1 heaped tablespoon dhania (coriander) Jeera powder1 tablespoon Kashmiri Chilli piwder1 tablespoon Crushed chilli2 Slit Red or Green chilli1 tablespoon salt1 heaped teaspoon tumericLittle Egg yellow1 tablespoon Lemon juiceNow keep Marinate for 1 hour On Stove Heat ½ cup ghee (Clarified butter) oil2-3 Grated Fried onion (keep some aside for wagar on top) 1 teaspoon jeera add 2 tuj (cinnamon stick) 2elachiFew whole peppers 2 cloves 2 Bay leaves 2 3-Slit fresh Red or Green ChilliBraise till the onion changes colour Now add the ½ Can or ½ Cup Tomato & Onion Mix Braise for 5 minutesNow ADD all the Marinated spiced meats, Cook on Stove for 15 minutes KEEP ASIDESeperately Fry in little oil5-6 Potatoes cut in length wise in halves with Salt (tumeric is optionalAs I like the poratoes to look whitish) KEEP ASIDE USE 1 CUP OF BOILED Masoor (Back lentils) (I USED READY TO USE 1 CAN DRAINED Masoor (Back lentils) AS I PREFER LESS Masoor (Back lentils)) FOR SAFFRON RICEI USED 3 to 3 & ½ cups rice +- 3 tablespoon ROUGH SALTSome Elachi (cardomom) tuj (cinnamon stick) Few drops if Egg yellow food colour and Saffron essence Boil wellWhen nice and fluffy Drain in cold water Then Make wagaar with (Optional Sliced Onions, almonds, Cashew nuts, pista (pistachio nuts)) To the rice with ghee (Clarified butter) ADD TO THE RICE Crush few strands if Saffron strands into the rice and toss well KEEP ASIDE IN A POTLayer it differentlySee belowLayer all potatoes at bottom of potAdd half Marinated meatsAdd All Masoor (Back lentils)Layer 1 cup rice over Then the rest of the MeatsSprinkle little Saffron waterNow Cover with the Rest of the Saffron Rice Place in Oven Bake for +- 2 & ½ hours at 180* Serve with Minty DahiAnd or any Green Salad or Simple Carrot Onion Green Chilli salad,With Achar and PaparEnjoy
