CAKE4 large eggs ¾ - 1 cup sugar 1 cup oil 3-4 medium oranges (1 CUP OF JUICE)Orange rind (TO YOUR TASTE) 2 cups self-raising flour 1½ teaspoon baking powder GLACE ICING1 cup icing sugar 2 tablespoon orange juice
CAKE:1) Whisk eggs and sugar until light and fluffy.2) Add oil - mix.3) Add the juice & rind - mix.4).Add sifted self-raising flour and baking powder - mix.5) Pour into a greased bundt tin and bake at 180°Cup for 35-40 minutes, or until done. GLACE ICING:Add the orange juice to the icing and mix. Use 2 tablespoon and if it's too thick add another ½ teaspoon of orange juice.

• Do not over mix the batter.
• Always use freshly squeezed orange juice, the bottled juice doesn't work as well.
