Just the marinated Soak the cleaned leg in a big dish of water, add to it a handful of rough salt, 10 cloves, whole black pepper and 2 to 3 bay leaves. Leave for an hour.Mix 2 tablespoon fine garlic, 2 tablespoon red masala, 1 tablespoon green masala 1 tablespoon ginger garlic, ¼ teaspoon haldie,(optional, I don't use it) 1 to 2 tablespoon rough black pepper and 1 to 2 tablespoon of Kashmiri red chillie powder . Vinegar, lemon juice 2 to 3 tablespoon, and oil, mix well.Remove and pat dry the leg, now take 1 tablespoon dry mustard powder (Colman's) and rub on to the leg you might need a little more, then mix the masala onto the roast and marinade for at least 2 days in the fridge before makingI make it in the electric frying pan,for 2 ½ hours, and when almost done I add 20 baby potatoes and baby onions and Woollies baby carrots or normal carrots sliced in the pan add more water and cook until done.
