INGREDIENTS
2 firm mangoes, peeled and julienned1 firm Papaya, peeled and julienned 1 Cucumber, julienned1 red onion, thinly sliced1 red pepper, thinly sliced1/2 Cup toasted cashews, chopped1/3 Cup coriander, chopped1/3 Cup mint, chopped1/3 Cup spring onion, chopped1/3 Cup coconut shavings
Dressing:3 tablespoon fish sauce/soy sauce1/4c lemon juice, freshly squeezed2 tablespoon brown sugar1 teaspoon crushed chillies1 tablespoon sesame oil1 tablespoon honey or more to taste
METHOD
Toss everything together reserving the cashews and coconut shavings for sprinkling over when serving
DressingMix together and boil for 5minsAllow to cool then pour over salad
INFO & TIPS
I left out the Papaya and used a white onion in place of the red
I also used soy sauce as I didn't have fish sauce (fish sauce available at woolies)
