INGREDIENTS
This truly is Chicken soup for the soul especially when you're out with a cold
1 onion choppedghee (Clarified butter)Whole jeera seedsCinnamon stickBlack peppercornsWhole clovesCardamom podsChicken pieces*TurmericSaltFine dhanaFine jeeraFresh ginger slices/grated (about 2cm piece)2 Cup boiled water*Sprinkle Fine black and white pepperNoodles or spaghetti
METHOD
In a pot, heat ghee (Clarified butter), add onion and braise until transparent. Add in whole jeera seeds and braise until lightly browned. Add remaining whole spices and braise for 5mins, then add in chicken pieces, ginger turmeric, salt, dhana and jeera, cook until chicken is well coated in the turmeric.Add in 2 Cup water and sprinkle of black pepper, close lid and allow to boil, about 1 to 1 and half hours. Remove chicken, debone and shred then add back to potCheck water and add more if necessary, adjust seasoningSprinkle white pepper for added flavourThereafter add in boiled noodles or spaghettiGarnish with chopped green dhania (coriander)Serve with crusty bread or croutons
INFO & TIPS
* using chicken pieces with the bone on adds more nutrients than chicken fillet
* I added 3cups chicken stock in place of water
