INGREDIENTS
2 Eggs⅓ cup sour cream⅓ cup olive oil or your choice of vegetable oil½ cup full cream milk ½ teaspoon minced garlic (optional) 1 ½ cup grated cheddar cheese1 ½ cup plain flour 1 ½ teaspoon Baking powder ½ teaspoon salt Pepper to taste ½ teaspoon cumin powder (optional) 1 ½ cup finely fresh chopped baby spinach Red pepper chopped (optional)
METHOD
Preheat oven to 180 degrees and grease or oil muffin pans Wash and dry spinach In a large bowl beat the eggs then add the sour cream, olive oil, full cream milk and minced garlic, stir until combined. Then add in the grated cheddar cheese. Add plain flour, baking powder, salt, pepper, ground cumin and whisk until well combined. Add in spinach and red peppers fold in with spatula. Add in muffin pans and bake 15-20 minutes.
INFO & TIPS
Add grated cheese on top and poppy seeds (optional)
