1 cup castor sugar 5 eggs1 ½ teaspoons strawberry essence 2 ½ cups cake flour 4 teaspoon baking powder Pinch salt 1 cup fresh milk plus 4 Tablespoons milk¾ cup vegetable oilFew fresh strawberries or 2 Tablespoon strawberry purée Coconut sprinkles Strawberry Syrup 1 ¼ cup water2 tablespoon strawberry purée ½ teaspoon red food colouring Add boiling water in a bowl, strawberry purée and red food colour, cool before dunking. Filling optional, one can use whipped fresh cream, icing sugar and pipe.
In a mixing bowl, add sugar and eggs, cream well,until desolved, add strawberries essence. Sift all dry ingredients and add to wet mixture. Add milk to mixture, combined followed by veg oil. Grease 2 x 12 muffins pans and bake for 20-25 minutes until skewer comes out clean. Cool before dipping into strawberries syrup, roll into coconut. Bon appetite ❤️Shu-Hani❤️
