2 medium size ripe tomotoes1 medium onions1 red chilli2 green chillies½ teaspoon brown sugar Salt to adjust taste 1 teaspoon sunflower oil1 teaspoon garlic flake 1 teaspoon vinegar or lemon juiceFresh chopped dhania (coriander) or sprig fresh curry leaves.
Wash 2 round ripe tomotoes and place in a pan or under oven grill, until it's bruised and tomotoe split open. It's must cook in its skin for the charred flavors Chopped onions finely, add chillies and all seasoning. Remove tomotoes skin, give it a slight mash throw into the onion mixture. Add lemon juice or vinegar, oil, garnish with fresh dhania (coriander) or curry leaves. Sprinkle with garlic flakes. Mix well, cling wrap and chill. Let it sit at least half an hour before serving.
