¾ cup freshly squeezed orange juice 2 tablespoons olive oil⅓ cup freshly squeezed lime juice 1 tablespoon lime zest1 teaspoon cumin powder2 tablespoons soya sauce 1 teaspoon crushed garlic½ cup chopped cilantro 1 teaspoon lemon pepperSalt to taste½ teaspoon chicken spice 1 teaspoon fine red chilli powder ½ teaspoon garlic salt
Cook on low heat. Or grill in oven. Or braai (bbq). I cooked in a pan. Continue basting all the time. Then I put into a griddle for a bit. I then added back to pan and basted with sauce.
Serve with basmati rice and salsa.
For the salsa1 Penney strawberries washed and chopped¼ red onion chopped¼ red pepper chopped¼ avo chopped¼ cucumber chopped
