INGREDIENTS
Coleslaw :1 bag coleslaw mix1 cup mayonnaise1 teaspoon. salt1 teaspoon. pepper¼ cup chopped pecan nuts½ tablespoon apple cider vinegar1 to 2 teaspoon sugar or honey* optional ( if you want to make the coleslaw sweeter)
Cubed potato salad:4 washed potatoes sliced in medium size cubes1 cup mayonnaise1 teaspoon salt1 teaspoon peppercoriander2/3 whole chilies cut into small pieces
METHOD
Coleslaw:*In a bowl add your coleslaw mix*In a separate bowl stir the mayonnaise, apple sider vinegar, salt, and pepper together. Taste for acidity and seasoning, then adjust as desired. If the dressing tastes too tart and you prefer a sweeter coleslaw, stir in the optional sugar.*Pour the dressing over the salad and mix well*Eat right away or let it sit in the refrigerator for about an hour to let the flavors mingle and the cabbage to soften.
Cubed potato salad:Wash and cut up the potatoes in medium size cubesBoil the potatoes and cook till they soften ( do not overcook) In a bowl add in the rest of the ingredients and mix together.Add the dressing to the boiled potatoes and mix softlygarnish with chopped coriander and chilies
