Chocolate fudge cake
3 tablespoon golden syrup - heat until runny and allow to cool175g self raising flour25g cocoa powder1 teaspoon baking powder150g brown sugar2 eggs150ml oil150ml milk
Fudge icing:114g butter125g icing sugar25g cocoa powder2 tablespoon milk
METHOD
Sift together flour, cocoa and baking powderMix in sugar and set asideWhisk together eggs, oil and milk - whisk this mixture into flour mixtureGently fold in cooled golden syrupDivide batter into 2x 17cm round cake tinsBake at 180 for about 30mims or until skewer inserted comes out clean
PIcing:Melt butter on low heat Add in cocoa powder and allow to cook for 1 to 2 minutes...all to coolBeat in icing sugar, add milk until icing is glossyAllow to cool for 30mins, icing will thicken while standingSandwich cakes and cover with remaining icing Decorate as desired
