INGREDIENTS
4 eggs1 Cup sugar3 teaspoon baking powder1&1/4c flourPinch of salt1/2 Cup boiling water1/2 Cup oil1 teaspoon vanilla essence (I used chai flavouring)
Topping:400ml coconut cream 5 tablespoon caster sugar1/2 Cup freshly grated coconut
METHOD
Beat eggs and sugar until light and fluffyAdd in the sifted fry ingredients (flour, baking powder and salt) and add to egg mixing in wellMix together oil, boiling water and essence. Add to above to form the batterBake at 180 for 20mins or until done
Topping:Whisk together coconut cream and caster sugar until soft peaks formTop cake with cream and decorate with grated coconut
