INGREDIENTS
1 tablespoon olive oil 2 medium onions finely chopped2 carrots finely chopped2 Celery sticks finely chopped3 garlic cloves minced2-3 rosemary sprigs finely chopped500g beef mince
Sauce:2 x 400g canned tomatoes1 small bunch basil - ¾ chopped + remainder for garnishing1 teaspoon oregano2 bay leaves2 tablespoon tomato puree1 beef stock cube1 red chillie finely chopped (optional)125ml red wine vinegar6 cherry tomatoes halved
To season & serve:75g freshly grated parmesan cheese400g spaghetti Crusty bread
METHOD
Heat oil and saute onion, carrot, Celery, garlic and rosemary for 10mins until softenedAdd mince and stir for 3 to 4 minutes until brownedAdd canned tomatoes, basil, oregano, bay leaves, tomato puree, beef cube, chilli, vinegar and cherry tomatoes - breaking them upBring to a boil then reduce to simmer and cover. Cook for 75mins until you have a thick sauce.Add in parmesan, adjust seasoning and stirServe with spaghetti- mixed in or on the side
