RECIPE
½ butternut, cut into 6 slices*2 tablespoon olive oil *1/2 teaspoon crushed cumin*1/4 teaspoon crushed black pepper*Salt to taste *Pinch of chilli flakes6 dates, pitted and halved½ avocado, sliced2 tablespoon toasted pistachios 2 tablespoon toasted cashew nuts1/4c cranberries50g lettuce
Dressing:2 tablespoon olive oil1/2 tablespoon cinnamon 1/4 teaspoon crushed cumin1 tablespoon lemon juice1 tablespoon pomegranate molasses Honey to taste(I added in salt too as I felt it needed some salt)
Method:Mix together ingredients marked with (*)Toss with butternut and bake at 200 until tenderMake dressing and keep asideLayer lettuce in platter and top with butternut and remaining ingredients Pour dressing over before serving
